Lentil Salad with Sautéed Celery and Leek



1 Tsp Butter

1 Tsp Extra Virgin Olive Oil

3 Celery Sticks

2 Leeks

1 can of Lentils

1/2 Red Onion

1/2 Green Onions

1 English Cucumber or 4 mini Cucumbers

1/4 Cup Radish

1/4 Feta Cheese


2 Tbs Extra Virgin Olive Oil

1 1/2 Tbs Balsamic Vinaigrette

1 Tbs Lemon Juice

2 Cloves of Garlic

1 Tbs Dill

Salt and Pepper to taste


In a frying pan heat Butter and Oil until bubbling, add Celery and Leek and sauté for about 5 minutes or until tender. Set aside.

Drain and rinse one can of Lentils until the water runs clear and there is no foam build up on the surface of the lentils.

While the Lentils are draining and sitting you can make the dressing. In a measuring cup combine Oil, Vinaigrette, and Lemon Juice. Mix in Garlic, Dill, and Salt and Pepper to taste.

In a large bowl add Lentils, Onions, Cucumber, Radishes and Cheese. Then add the sautéed Celery and Leek. Mix in dressing.

This dish makes for a great side dish or is a great alternative to a tossed green salad. This dish is a great source of fiber! Feel free to add protein such as baby shrimp or chicken.

With diet and exercise you can really rediscover yourself. It found that cooking my own food with the freshest ingredients was the best way to manage my weight loss and change my approach and opinions to food. One thing I know for sure is that cooking and food is meant to be shared with the ones you love, always make extra! And always remember to Season to Taste!
